New Year, New Food, New Shows!

We're always excited to start the New Year, especially when the NASFT Fancy Food Show is right around the corner. The Fancy Food Show in San Francisco is such a joy, seeing your customers, meeting new people, and binging on great sushi at the local spots! What amazes me about the SF show is how food knowledgeable the entire community is – not just food professionals!

"What's new?" you ask? Yuzu Mayo! I’m very proud of this product, and we’ve gone through giant headaches in achieving this finished product. It’s a Japanese style all-natural mayonnaise; it's very eggy, rich, and decadent. The eggs used in this product are no more than three days out of the hen. It's comprised of just a few ingredients, and the acid used is pure yuzu citrus – no vinegar. And, of course, no MSG. Imagine a Kewpie Mayonnaise with a yuzu flavor and aroma profile that’s all natural!

"Is it expensive?" you ask? Price wise, Yuzu Mayo comes not too far from Kewpie Mayonnaise with what we think, is a much more special and superior product. In order to achieve the flavor profile we were striving for, we had to use a significant amount of pure yuzu citrus. It's a little more expensive than vinegar or lemon juice to say the least.

Once people try it, the first thing I notice is a grin that turns into a smile followed up with, “Wow, this is pretty darn good!”

In our final review of the development process, we utilized several high profile chefs from various backgrounds around the U.S. for their critique. Their unanimous response was, "Exceptional! When can we get this?”
