Takumi Shoyu Company is a small artisanal family brewery located in the Aichi Prefecture. This third generation family brewery continues to practice their craft using only traditional material and labor-intensive production processes. Takumi Shoyu Company incorporates mineral water, quality wheat, sea salt and soy beans.
The clean mineral water is blended with toasted wheat, sea salt and steamed soy beans to ferment in aged cedar barrels. The aged and seasoned barrels have been in use for over 60 years. The mild winters in the region encourage active fermentation throughout the years. This artisanal and ancient process of slow fermentation defines the roundness and rich, clean finish with a refined umami aftertaste.
